Corn and Chile Casserole - A nice "comfort food" side dish that combines cream-style corn, green chiles, cheddar cheese, minced garlic and onions. Easy to prepare!
Crab Cakes with Lemon Dill Sauce - One of our all time customer favorites! Homemade crab cakes, seasoned just right, lightly breaded and fried to a golden brown. Served with a fresh lemon dill sauce. Freeze the crab cakes if you like, but the sauce must be refrigerated (it'll keep for a week). If you want to split this recipe, serve the first batch with the lemon dill sauce and the second batch (from your freezer) with a cocktail sauce.
Cranberry Apple Relish - A delicious combination of cranberries, apples, pecans, and cinnamon. Serve it warm or cold - wonderful either way!

Crawfish and Corn Chowder - The feedback is always so great, and it seems like EVERYONE is waiting for this delicious meal to be on the menu again! Crawfish meat stirred into a rich base, mixed with corn, Ro-tel tomatoes, potatoes, green chilis and Cajun spices. As always, add more cayenne if you like it hot, less if not! It's great either way. Instead of making two split batches, we recommend freezing the leftovers for another day.
Cream Cheese Chicken Enchiladas - Mildly spicy chicken enchiladas. Chopped chicken, cream cheese, green chiles, black olives, monterrey jack, with flour tortillas. Quick, easy, fun, and delicious!
